Ingredients:
- 4 cups wild blueberries
- 2 cups granulated sugar
- Zest and juice of 2 lemons
- 1 tablespoon pectin
- 1/4 cup water
Instructions:
Wash and drain the wild blueberries
In a large pot, combine the wild blueberries, granulated sugar, lemon zest, and lemon juice
Cook over medium heat, stirring occasionally, until the mixture comes to a boil
In a separate bowl, mix the pectin and water until well combined
Stir the pectin mixture into the boiling blueberry mixture and continue to cook for 1-2 minutes, or until it thickens
Remove from heat and let it cool slightly
Transfer the preserves into sterilized jars, leaving about 1/4 inch of headspace at the top
Seal the jars with lids and process them in a boiling water bath for 10 minutes to ensure they are properly preserved
Allow the preserves to cool completely before storing in a cool, dark place
