Vegan Picnic Sandwiches



With lots of fresh vegetables and creamy hummus, these vegan sandwiches are great for a picnic lunch. You can make them quickly and enjoy them outside!

Ingredients:

  • 1 loaf of whole grain bread
  • 1 cup hummus
  • 1 large cucumber, thinly sliced
  • 1 large tomato, thinly sliced
  • 1 red onion, thinly sliced
  • 1 avocado, thinly sliced
  • 1 cup baby spinach leaves
  • Salt and pepper to taste

Instructions:

Slice the whole grain bread into desired sandwich sizes

Spread hummus generously on one side of each slice of bread

Layer cucumber, tomato, red onion, avocado, and spinach leaves on half of the bread slices

Season with salt and pepper

Top with the remaining slices of bread to create sandwiches

Secure sandwiches with toothpicks or wrap in parchment paper

Serve immediately or refrigerate until ready to pack for your picnic

Healthy Kale Spinach Bacon Cheese Stuffed Mushrooms



These healthy stuffed mushrooms are full of good things for you, like kale, spinach, and bacon. They make a tasty and filling keto-friendly appetizer or side dish. These stuffed mushrooms are sure to be a hit at your next party or family meal because they have just the right amount of flavors and textures.

Ingredients:

  • 8 large mushrooms
  • 1 cup kale, chopped
  • 1 cup spinach, chopped
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheese
  • Salt and pepper to taste

Instructions:

Before you start cooking, heat the oven to 375F 190C

Take the mushrooms' stems off and clean them with a damp paper towel

The kale and spinach should be cooked in a pan until they wilt

Put the cooked kale, spinach, crumbled bacon, and shredded cheese in a bowl

Add pepper and salt to taste

Fill up each mushroom cap with the mix, then put them on a baking sheet

Put the dish in an oven that has already been heated up and bake it for 15 to 20 minutes, or until the cheese melts and the mushrooms are soft

Enjoy while hot!

Lemon Garlic Sheet Pan Salmon - Simply Delicious



A mouthwatering gluten-free recipe that combines the flavors of lemon and garlic with perfectly roasted salmon and colorful vegetables. This easy sheet pan dinner is not only delicious but also incredibly healthy!

Ingredients:

  • 4 salmon fillets
  • 1 lemon, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 bunch asparagus, trimmed
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • Fresh parsley for garnish

Instructions:

Start by heating the oven to 400F 200C

Olive oil, dried oregano, salt, and pepper should all be mixed together in a small bowl

Put the salmon fillets in the middle of a large baking sheet that has been lined with silicone baking mats or parchment paper

Use the garlic and oregano mix to brush the salmon

Put lemon slices on top of the salmon fillets

Put asparagus, red bell pepper, zucchini, and cherry tomatoes in a bowl

Add a little olive oil, salt, and pepper

Cover the salmon on the sheet pan with the vegetable mix

In a hot oven, roast the salmon for 15 to 20 minutes, or until it's fully cooked and flaky when pierced with a fork

Add fresh parsley on top and serve hot
