Vegan Picnic Sandwiches



With lots of fresh vegetables and creamy hummus, these vegan sandwiches are great for a picnic lunch. You can make them quickly and enjoy them outside!

Ingredients:

  • 1 loaf of whole grain bread
  • 1 cup hummus
  • 1 large cucumber, thinly sliced
  • 1 large tomato, thinly sliced
  • 1 red onion, thinly sliced
  • 1 avocado, thinly sliced
  • 1 cup baby spinach leaves
  • Salt and pepper to taste

Instructions:

Slice the whole grain bread into desired sandwich sizes

Spread hummus generously on one side of each slice of bread

Layer cucumber, tomato, red onion, avocado, and spinach leaves on half of the bread slices

Season with salt and pepper

Top with the remaining slices of bread to create sandwiches

Secure sandwiches with toothpicks or wrap in parchment paper

Serve immediately or refrigerate until ready to pack for your picnic
