Ingredients:
- 2 large cucumbers, thinly sliced
- 1 red bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1 cup shredded carrots
- 1/2 cup roasted peanuts, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions:
Put the red bell pepper, red onion, shredded carrots, and half of the chopped peanuts in a large bowl
Put the peanut butter, soy sauce, lime juice, honey, minced garlic, grated ginger, salt, and pepper in a different bowl
Mix them together using a whisk
Put the satay dressing on top of the salad and toss it around to cover everything
Let the salad sit in the fridge for at least 30 minutes so that the flavors can mix
Add the rest of the chopped peanuts, fresh cilantro, and mint leaves to the salad just before serving
With the Cucumber Satay Crunch Salad, you can have a light meal or a cool and crunchy side dish
